I recently became vegan (per my doctors request) & am having a little trouble transitioning, help?

My Doctor recently had me switch to an all vegan diet. Before which, he had me on all meats&veggies. I was pre-diabetic and had high blood pressure and really high cholesterol and high blood sugar. In less than 2 months, I've gotten it under control,with low blood pressure and my cholesterol is just slightly high. Still needing to improve though, he has me off of all Starches (pasta, bread, cereals, etc..) and no Fruits, because they are so high in natural sugar. Also, because of all the meat, I now have extremely high Protein levels. So,if you guys have any ideas on Vegan meal options, breakfast especially, or snack foods maybe? PLEASE let me know, anything helps. I'm really frustrated with not knowing all my options. Thanks! :)
